I felt sure Organic Intelligence were going to let me go (отпустить, отменить контракт)) when we discussed voluntary redundancy (сокращение штатов, увольнение по выбору).Я был уверен, что Органический Интеллект меня отпустит, когда мы обсуждали добровольное увольнение.

"To let someone go" is to terminate their contract. - Отпустить кого-то" означает расторгнуть контракт.

"Voluntary redundancy" is giving employees the choice to leave.

""Добровольное увольнение" дает работникам возможность уйти.

The redundancy package was very tempting, but I didn't want to be laid off. -Сокращение было очень заманчивым, но я не хотел, чтобы меня увольняли.
An employee is "laid off"(уволен-глагол); a company has "a layoff".(увольнение -сущ-е)

My manager was very clear that Dynasty Holdings intended to outsource ( передать) many processes.
After "a merger", the new company might choose to "outsource" some processes.

Outsourcing is a good way to streamline and cut costs.
Milo's manager explained that they needed to "streamline" by "outsourcing" some processes.

Then another company, Hammer Industries, called me with a fantastic offer, so I decided to jump ship.
Milo left one company to take up a better offer with another company, so he "jumped ship".

I was lucky, as there was another big staff shakeup after I left, with a lot of redundancies and they weren't voluntary (добровольными).

Мне повезло, так как после того, как я ушел, был еще один большой персонал, с большим количеством увольнений и они не были добровольными.
A "staff shakeup"(кадровые изменения) could include many "redundancies".

"Кадровые изменения, Встряска персонала" может включать в себя много "увольнений".

I even heard someone in my old team was dismissed ( увольнение за плохую работу) for poor performance.
A company "dismisses" someone for poor performance, or 

"lays them off" for other reasons.

As I jumped ship, I didn't receive a very generous redundancy package, but I'm happy with my decision.
If you "jump ship", you choose to leave a company, so you might not receive a "redundancy package".
